Mini Apple Pies and a Free Giveaway!!

How do you make apple pie better? Miniaturize it!

Miniature apple pies fresh out of the oven with a yummy golden crust.

Good things come in small packages, right? I am so excited to show you how to make these! And even more excited that I get to give away some of my favorite kitchen tools so you can make these too! Priority Ministries’ mission is to encourage you to love God most and serve Him in every area of your life- even in the kitchen! That’s why we are giving away some pretty neat stuff that will help you make these fun little pies so you can spread the love too!

Skip on down to the bottom to enter the giveaway.

Green bowl full of Gala apples

For the mini apple pies, start off with a bowl full of apples. One of my favorites for pies is Jonagold, but if they are not in season Gala or Golden Delicious are great as well.

Here’s a handy link to help you choose the best apple:   Apples and Their Uses.

Now on to peeling and chopping!

A peeled apple lies on a green cutting board along with a lime green apple peeler and an apple with a smiley face carved into it.

And if you feel the need to practice your carving skills on an apple, please do and then send me a photo! Peeling is a lot easier with a Y peeler and that’s why Priority is giving one away! You can Glo while you peel!

Cut up apples on a cutting board

If you are me then after chopping all your apples, you will remember that basket full of laundry that needs to be folded…

Little girl pulling laundry out of the basket.

…and get totally sidetracked from making apple pies because… baby+laundry= folding everything 3 times at least (that’s called mommy math). She hands me each item of clothing at break-neck speeds and if I can’t fold fast enough she gets impatient and throws them behind her – hence the pile on the floor. Good thing she’s super cute huh? Now you see why I totally forgot to take a photo of the luscious cinnamon sugar mixture that I sprinkled over those chopped apples. Sorry ’bout that! The recipe is at the bottom of this post so you can have all the details.

A bowl with flour and butter being cut into it with a pastry cutter.

For the pie dough I use this handy pastry blender to cut my butter and shortening into the flour. Forks and fingers work well too though. Keep at it until you get the bits down to tic-tac size(which is smaller than an m&m, but bigger than a nerd). Everyone else says pea size, but I like to be different. Don’t you? Plus, it’s almost Halloween and I have candy on my mind.  A quick finger hug test can help you tell if you’re there.

Pie dough squeeze test

If it sticks together pretty well then it’s time to sprinkle some water over it, form it into a ball and bring it to your rolling mat. These silicone rolling mats are a must have for pie dough.

cutting two inch circles from pie dough

After you cut out 2 inch circles then dollop a bit of the delicious apple mixture on top. Filling mini apple pies

Mmmm… Grab another dough circle and gently stretch it over the filling. Crimp the two edges together with a fork and give those little cuties a brush with egg wash. Lookin’ good.

Now all that’s left to do is bake them and marvel at your mini masterpieces!

Cute and sweet mini apple pies!

Here’s the recipe and below  is how to enter the giveaway for a free silicone rolling mat and Y peeler!

Mini Apple Pie Filling:
1 cup sugar
3 Tbsp flour
½ tsp cinnamon
⅛ tsp nutmeg
1 tsp coriander
6-7 cups peeled and cubed apples
(about 4 extra large apples)
Pie Dough:
1⅓ cup flour
½ tsp. salt
½ cup shortening
¼ cup cold water

Make Filling: Combine all ingredients in a large bowl. Let stand for 30 minutes while you prepare the pie dough.  Preheat oven to 375˚.

Make the Dough: Combine flour, salt and sugar in a large bowl. Cut in butter and shortening with a pastry blender until mixture resembles small peas. Drizzle with ice water. Stir with a fork until combined. (mixture will be crumbly and dry.) Knead mixture lightly and shape into a disk. Divide dough in half.

Roll the Dough: Roll half of the dough out on a floured surface to ⅛ inch thickness. Cut out circles with a 2 ¼ inch round cutter, rerolling scraps as needed. Place on parchment lined baking sheets.

Fill: Drop a small spoonful of apple mixture on top of each circle. Dampen edges of dough. Roll out and cut remaining dough and place on top of each circle. Gently stretch till edges meet, pressing to seal and then crimping with a fork. Cut a small slit in the tops for steam to escape.

Brush and Bake: Stir together egg yolk and cream and brush on tops of pies. Sprinkle with sugar. Freeze pies 10 minutes then bake at 375˚ for 20 to 25 minutes or until lightly browned. Serve warm or at room temperature.

My new favorite kitchen tool is the kitchenaid stand mixer. I used to be afraid of it, I don’t know why, but I was. 🙂 I really enjoy baking.

Thanks for your comment Lisa. KitchenAid mixers are amazing! They are so powerful that they can be scary. I’ve startled myself a few times by accidentally turning it on full blast with a bowl full of flour! What a mess that makes! Nothing else makes creamy mashed potatoes quite like a KitchenAid though.

My favorite tool is my Chef knife. It will dice those apples quickly. I believe I can make them sugar free! They look so good but the smile on the baby was sweeter:-) I will try this out. Thanks for sharing this mini receipt as baking goes great with the cooler days.

Thanks for sharing a great recipe. I love the apples we get in the fall here in Japan and plan to make these littles pies right away. I bake a lot of pies but never thought about making mini ones – thank you for the idea!

My favorite kitchen tools are ice cream scoops. I use them all the time – small ones for cookie dough and meatballs, larger ones for muffin and pancake batter, and a mid-ish size one that makes perfect big cookies that everyone loves. 🙂

Katie, How awesome to see a comment from Japan! I agree with you – different sized scoops are so handy! Makes short work of making cookies and muffins. Wish I could sample some of those Japanese apples! Yum!

Autumn is my favorite time of year. I love when the leaves on the trees change to all the beautiful fall colors. So beautiful, here in the midwest.

My mom said she was raking leaves in late October when she went into labor with me (many years ago), maybe that is why this is my favorite time of year.

Thanks for sharing this wonderful recipe. My husband has been wanting me to make fried pies, maybe I’ll make them and try this recipe too. Looks so delicious–I think I can smell them baking! 🙂 Have a blessed fall.

While the apple pies look scrumptious, the picture of the laundry helper is what had me sold. Sugar and spice and everything nice! Love that baby!

So easy to get side tracked while doing anything. And with such a cutie to help you–amazing you got back on track. My favorite kitchen tool–probably my slow cooker. Great for days we do a lot of running.

My youngest is 5 and she says when she grows up she wants to work in publix in the bakery , last year her pre-k class went to publix on a field trip, and she was very impressed.
